Eating Local All Year Round: Frozen Fruit and Yogurt Bites Recipe

Our whole family loves fruit! However, this time of year, where local fruit isn't in season, we have to get creative in creating fruit snacks.

This week we tried something new: frozen yogurt bites!

Using local frozen fruit, we combined it with yogurt to make some tasty fruit and yogurt bites. I like them because you can eat them on their own as a little snack or you can pop them in your smoothie with some added ingredients for a snack on the go.

This way we are still eating local but getting some fruit into our diet!

Recipe: Frozen fruit & yogurt bites

1 cup of frozen fruit

2 cups of yogurt

1/3 cup of water or dairy

Optional: cinnamon and flax seed

  1. Throw the frozen fruit and yogurt into the blender.

  2. Line a baking tray with parchment paper.

  3. Poor the fruit and yogurt mixture out onto the baking tray and use the back of a spoon to smooth it out evenly over the tray.

  4. Top with more fruit, nuts, flax seed, or cinnamon.

  5. Pop the tray in the freezer over night.

  6. Once frozen, separate from parchment paper, place on a cutting board and chop into pieces.

Enjoy this frozen snack as is or use it in smoothies!
